GALACTO-OLIGOSACCHARIDE


GALACTO-OLIGOSACCHARIDE are another type of nondigestible fiber with prebiotic activity. β-GOS, also referred to as trans-GOS, are β-(1→6) linked galactosyl residues that terminate in a β-(1→4) linked glucose unit, with a mixture of other bond types present. β-Linked GOS are made by enzymatic synthesis from lactose using bacterial galactosidases. α-GOS are similar, but with α–(1→6) linkages and come primarily from soybeans, and their prebiotic effects are less well defined.

GALACTO-OLIGOSACCHARIDE is a galactose oligomer with some glucose/lactose/galactose units. GOS may also be produced synthetically from lactose syrup using β-galactosidase. GOS is not broken down in the stomach or small intestine and, thus, reach the colon largely intact (Tuohy et al., 2001a,b). β-Galactosidases are essential enzymes for Bifidobacteria to be able to grow on milk or milk-based substrates, such as lactose and lactose-derived products containing β-galactosidic-linkages. 


Diversity of Bifidobacterium strains has been studied with respect to their β-galactosidase activity in more or less detail. Galactans can also be commercially prepared through the enzymatic conversion of lactose with β-D-galacosidase, resulting in lactose connected to a chain of galactose monomers ranging between 2 and 8 monomers in length. These polymers vary in chain length and linkages, making them indigestible by human enzymes and thus giving them their prebiotic effect.

CHARACTERISTICS 

The sweetness is 30-40% of sucrose, and the sweetness is soft and pure

GOS are relatively stable under high temperature and acid conditions

APPLICATION REGULATIONS

- Japan: Used as a component in health foods and can be used in dairy products as a prebiotic.

- United States: GRAS approved by the FDA.

- Europe: Allowed to be used as a food ingredient in infant formulas at an added level of up to 0.8g/100mL. 

- Australia & New Zealand: Permitted for use in infant formula at a maximum level of 0.8g/100mL.

- China: Approved as a new resource food and can be added to infant food and dairy products at a consumption level of no more than 15g/day .
