ISOMALTULOSE, i.e. 6-O-α-D-glucopyranose-D-fructose, is a crystalline reducing disaccharide, formed by combining glucose and fructose with α-1,6 glycosidic bond. The molecular formula is C12H22O11-H2O. isomaltulose crystals contain 1 molecule of water, rhombohedral crystals, similar in appearance to white granulated sugar, the crystals are slightly finer than white granulated sugar, and do not crystallize after water loss.
The new molecular linkage of ISOMALTULOSE is more stable compared to that of sucrose. Isomaltulose has a mild, natural sweetness (approximately 50% of sucrose), without any aftertaste. It replaces sucrose on a 1:1 scale and can easily be combined with other sweeteners to achieve a unique and tailored sweetness profile. Isomaltulose is a very low hygroscopic powder. It absorbs virtually no moisture and remains stable at a temperature of 25 °C and relative humidity up to 85 %.

Physical and chemical properties:
1. The melting point is 122-123 ℃, much lower than that of sucrose (182 ℃).
2. The reducibility was 52% of glucose.
3. The sweetness is 42% of sucrose. Its sweetness is similar to that of sucrose.
4. Isomaltose has no hygroscopicity.
5. At room temperature, the solubility of isomaltulose is only half of that of sucrose. With the increase of temperature, its solubility will increase sharply, reaching 85% of sucrose at 80 ℃.
6. At the same concentration, the density of isomaltulose is slightly higher than that of sucrose, and the viscosity is close to that of sucrose.
7. Isomaltose has strong acid hydrolysis resistance, which is conducive to maintaining isoosmotic pressure.
8.The thermal stability of isomaltulose was slightly worse than that of sucrose, and slight browning began to appear at 120 ℃ during sugar boiling; Browning, decomposition and polymerization occur at 140 ℃; Above 160 ℃, these reactions are obviously intensified.
9.Isomaltose is slightly easier to color than sucrose when heated at high temperature for a long time, while it is not easy to color at pH 3-4.
10.It is difficult to ferment and is not fermented by most bacteria and yeasts.
