Low GI Natural Sweetener Isomaltulose Powder


Isomaltose, i.e. 6-O- α- D-glucopyranose-D-fructose, a crystalline reducing disaccharide, is composed of glucose and fructose α- 1, 6 glycoside bond. The molecular formula is C12H22O11•H2O.

The Isomaltulose crystal contains 1 molecule of water, which is a rhombic crystal. Its appearance is similar to that of white granulated sugar. The crystal is slightly thinner than that of white granulated sugar, and it does not appear crystalline after water loss.

Specification:

1.The melting point is 122-123 ℃, much lower than that of sucrose (182 ℃).

2.The reducibility was 52% of glucose.

3.The sweetness is 42% of sucrose. Its sweetness is similar to that of sucrose.

4.Isomaltose has no hygroscopicity.

5.At room temperature, the solubility of isomaltulose is only half of that of sucrose. With the increase of temperature, its solubility will increase sharply, reaching 85% of sucrose at 80 ℃.

6.At the same concentration, the density of isomaltulose is slightly higher than that of sucrose, and the viscosity is close to that of sucrose.

7.Isomaltose has strong acid hydrolysis resistance, which is conducive to maintaining isoosmotic pressure.
