Fructo-Oligosachharide

Fructo-Oligosachharide are basically obtained from plant sources and comprise 3–10 fructose units with the terminal fructose linked to a glucose residue by β-(1→2) glycosidic bonds, that is, they have a nonreducing sucrose end. FOS and Inulin are classified based on their DP, which is based on the number of monosaccharide units. FOS have a DP <10, while inulin has a DP ranging between 2 and 60. FOS differs from inulin and synthetic fructooligosaccharides in the DP or the number of units that make up the molecule. FOS are synthesized either by the hydrolytic activity of β-fructofuranosidases, such as invertase or inulinase, or by transglycosylation using the enzyme levansucrase (Xu et al., 2014). Enzymatic synthesis results in a more versatile FOS composition, making it a preferred choice. In comparison to inulin-type FOS, levan-type FOS have been found to be more stable and also induce higher growth of Bifidobacterium lactis and synthesis of SCFA, such as acetate and lactate. This lactate is converted into butyrate by the colonic microflora, which serves as a source of energy for the colonocytes.

Fos Structure


Fructo-Oligosachharide are highly soluble in water (about 80%) and show high stability in food with the pH range of 4.0–7.0. They are low-calorie-containing carbohydrates, that is, about 1.0–1.7 kCal/g. FOS have sweetening profile and water retention properties similar to those of sucrose and Sorbitol. A blend of acesulfame and K-aspartame with FOS yields a smooth and creamy texture like fat, reduced after taste, and enhanced stability.
