Isomalt: A toothfriendly sugar replacer.

Isomalt is a naturally sourced sugar replacer On top, it is 100% sugar-free and even helps to prevent tooth decay. Thanks to a two-stage production process of enzymatic sucrose treatment and hydrogenation, the resulting unique molecular structure gives our Isomalt a sweetening profile almost equal to sucrose – but with half the calories! While used in many food applications, Isomalt is the number one sugar replacer worldwide in hard candies.

Isomalt Physical properties:

1. A white crystalline powder without odor
2. 55% as sweet as sucrose; slowly dissolves in the mouth and has only a slight cooling effect
3. Low hygroscopicity – does not readily absorbs moisture from the air at relative humidity 85%
4. Solubility in water at 77 °F (25° C) = 25 g/100 g solution; poorly soluble in ethanol
5. Melting point 145-150° C
6. Decomposes at temperatures higher than 160° C

7. Isomalt will not caramelize or undergo the Maillard browning reaction with amino acids

Isomalt Function:

 1. Low hygroscopicity reduces stickiness & ensures longer shelf-life.
Isomalt has a lower hygroscopicity,Isomalt prevents hard boiled candies from becoming sticky or moist, so that even unwrapped items can be packaged together, guaranteeing a longer shelf life.
 2. Contributing to brilliant colours & coatings.
 Isomalt significantly contributes to colour brilliance of coatings of e.g. sugar-free chewing gum and chewy candies.Isomalt also creates visually attractive, transparent high boiled candies and lollipops.
 3. Optimising taste & mouthfeel.
  Isomalt has a very similar properties to sugar – with about 55% sweetness of sucrose. The use allows for formulations with a very natural taste. It cannot generate any bad taste or aftertaste when combined with high-intensity sweeteners.

4. As Isomalt has no moisture, it benefits the crunchiness of coated applications. It also ensures a smooth surface in deposited candies and lollipops.
